When eating better I have to involve my family. The main reason is because it’s easier on the old bank account; but I don’t mind the fact that it encourages them to make better food choices as they grow into real people.
Experiment number 1 was OFF THE CHAIN!

The main thing, so far, I’ve found about trying to eat better is I can’t be as lazy with it. This is how you know I’m serious. I cooked real chicken for this. I didn’t get the canned chicken that is conveniently packaged for me and is also some kind of processed, yet delicious, rib meat. Real chicken.
I chopped up 2 large chicken breasts, cooked them with 2 tbsp of lemon juice, 1 tsp of ginger, Himalayan salt, and pepper. After cooking the chicken I drained it and put it into a plastic container and placed it in the fridge so it could cool off. I let it sit there for roughly ten minutes.
I combined it all in a bigger, more sexy, bowl and added 1 ½ tablespoons of mayo (Dukes).
I rinsed some lettuce and lined one side of each pita pocket with it. All that was left to do was spoon some chicken salad into those suckers! Ya’ll! It was the sh*t! The kids loved it! The husband even liked it and he is not a huge fan of my cooking.
Helpful hint: Use a pizza cutter to cut your pita bread. It only took me 35 years to figure that out.
What I will try next time
As much as I loved this meal, I know I can make it better! Next time I’m going to try throwing some sunflower seeds into the mix. Also, instead of mayonnaise, I may use avocado instead of mayo. I love the flavor of them and the store gave me 8 when I ordered 4.
